    I'm attempting a 16lb grain stout tomorrow. I also got it double milled as well so that the sugar extraction should work a bit better as well as take up slightly less volume. Aiming for a Gravity of 1.081. If i fall quite short of that i'll add some extract.

    Oh No! Unexpected issue

    I've noticed that as well; after it's sat for a few weeks, the tartness has gone down a lot. I thought the major part of the problem may have been from the higher than expected fermentation temperature. Thankfully though, the flavors are mellowing out- It has a fantastic aroma to boot.

    Sounds like i'll be making 2 batches. 1 Batch with pure fresh fruit that i freeze to sanitize and the other a mixture of fresh fruit and extract to give it that extra oomph. Regarding sanitizing the fruit, is freezing it enough or should i also pour sanitizer over it?
