    It's a pretty high end model, but it's what I already have and I just put central air in the house so it will no loner be used. I don't know how many bells and whistles it really has, but it's digital and puts out a ton of cold air.

    I am not a professional brewer, but I have never heard of a 3 hour boil. Do you have a link to the information you are looking at? 2 hour boil is the highest I've ever heard of, with 90 minutes being the normal "long" boil and 60 minutes being the standard boil.

    I wouldn't worry about it, the co2 produced would have kept anything from falling into the starter, and the foaming just served to reassure you the yeast is viable. I say use it!
