    Agreed. It may just be out of hydro date or it may have an actual problem with the valve and it's cheaper for them to throw it out. I wouldn't expect any medical facility to throw out a bottle just because it's out of date and I'd expect a welding shop to check dates on any bottle they fill.

    This. Are you controlling fermentation temperature within a degree or two OR are you pitching yeast and letting it sit at ambient temperatures? If you are controlling temperature how are you controlling it? Mini fridge and a digital controller? Cool Brew Bag? T-Shirt Trick?

    Do you use a heater in your garage while brewing during the winter?

    I brewed Saturday with a propane heated and had the brew burner going at the same time. Occasionally I'd open the garage because it was a little too warm or I didn't like the humid smell from the boil. No headaches, pains or problems.

    I'd go with your pH meter then check your mash pH and see how accurate you calculations are compared to actual results.     Long boiling technique

    I have done one batch with a 3 hour boil. I aimed to have my pre-boil volume compensate for boil off of the 3 hour boil. Hope you have something to do during the boil because it's a long time and you'll end up checking the boil every 15 minutes or so to make sure it's still going.
