    What temp/pressure do you shoot for? Are you finding the results strain dependent? I'm doing lagers cool into spunding at the moment, but I've been curious to give warm/pressure a shot. I use Augustiner yeast exclusively for my lagers, how do you think that strain would behave warm with pressure?

    Isnt that blend just Brettanomyces? If you are just looking for more sour, I would get my hands on a bottle of Cascade and use those dregs. Theyve worked quickly for me and should do well with those IBUs you have.

    They have a tasting room, and do tours or the Malt House. I know people have gotten smaller amounts there, but I think you need to call ahead to get sorted. In Portland, FH Steinbarts carries their stuff - last time I was in there I believe they had their entire collection.

    I agree, but would think a little bit of pressure before the transfer of fermenting wort to the serving vessel could be good practice.

    If you are kegging you could just use actively fermenting Brett in a priming solution. Let it carbonate, Chill it in the same time frame as you would a clean beer.

    Yeah I’m nervous about the pump size. I read on a review it would only fit the four pumps if they were Penguin pumps but I already have the systems with ssbt and spike.

    Honestly, for me it is the Low Oxygen Brewing stuff that makes that difference. I slowly began to incorporate some of those techniques, and for me it really is the only way to make a Lager. I don't do all beers this way, but Lager's and Kolsch - it was like night and day for me.
