    I'd like to try a mint chocolate stout

    I made a Mint Julep Stout. Using fresh leaves did very little; 3 tsp of mint extract got me what I wanted. It is VERY strong; add it little by little before bottling/kegging until you reach your desired level of minty-ness.

    Pomegranate Apple Cider! I had a few pints of it at 21st Amendment in San Francisco and currently have a batch going. I used 16 ounces of pomegranate juice and 112 ounces of apple juice, and it certainly has an interesting flavor. I used Nottingham yeast.

    That is an epic beer. As I live in TX, I have no access to it except for when I visit family up north. I'd be interested to see your recipe, as I'll probably work on recreating it at some point in the future.
