    Mash/decoction profiles for lagers

Hey all: I recently did my first lager (a Bohemian Pilsner). I did lots of research to figure out the best decoction/mash steps I could. I ended up with dough in infusion 70 for 30 min acid rest infusion 95 for 20 min protein rest decoction brings mash up to 127 for 10...

    Lager Starter

I've heard going both ways, but prefer to avoid esters of warm fermentation. I brewed a Bohemian pilsner 10 days ago and used Wyeast 2000. I put my yeast starter in the fermenting fridge at 54 degrees 7 days before brewing. Mid week I poured off beer and added more wort. Finally on brew day...

    Temp controller fix

I have the same unit on my kegerator and it works fine, lasts a long time. You could try to solder the sensor wire. Not sure if it's solid core or something else. It's worth trying to save I would think.

    Rims tube

Forget the RIMS for the HLT and boil. Just use gas and a thermometer. If you are using the RIMS tube to introduce heat to help you get to temp--it won't work very well. Propane rocks for that though. I introduced a RIMS tube into the rig recently and find it works wonders for keeping your...

Need input on my butter beer recipe

Beware too much Cara-pils. I used 1/2 Lb in my Better Red Than Dead Red Ale and found that dispensing from my tap creates a 5" head on every pour...when the beer is only carbonated to 2.1 volumes or so. I never used more than a Lb of flaked Barley, but that should be nice. I echo the...

    Counterflow Chillers flat or coiled?

I have used the same chilling setup both ways. It is a 3/8" copper tube inside a 5/8" hose with compression fittings on it. It was large and bulky as a spiral (used a corny keg to wrap it uniformly). When I remodeled my first brew rig, I made it lay flat and built a box about 3" deep by...

    All Grain Haze, please help

I have been brewing for a few years and still get chill haze even when it is clear in the secondary. I have read that it could be low flocculation of yeast or longer proteins "congealing". I tend to serve at 48 degrees and almost always have haze. I figure if I invested in a cartridge filter...

And my first parti-gyle is started.

Who among us hasn't had a storm of unforeseen circumstances when undertaking a new project? I have been plotting a few new ones and expect the same. -Been doing ales, have a Bohemian Pilsner planned next -Would like to do a partigyle, but need to carbo bash before undertaking a 6 hour brew day...

    Fourth all grain

Well done! It's great to hit your stride and get repeatable results.

    Just bought a refractometer!

I love my refractometer for brewtime validation. I wish there was one tool for brewtime and ferment time, but you have to hang on to the hydrometer. My hydrometer measures water at .096, so I always have to add 4 points for an accurate room temp measurement. Be aware of your needed correction...

    New member, and brewhouse efficiency

I sweated the efficiency when I first started because I felt it was too low. I have learned that a consistent result (high or low) is what pays off because you can buy the right amount of grain and always have the right volume of wort in the boiler. I use beersmith and with my rig and my...

    I forgot how to mash

It depends if you batch or fly sparge I guess. I batch sparge (much to the chagrin of my fly sparging neighbor) and have my rig dialed in to 73%. Still possibly low, but works consistently which is the important thing. I use a variation of your 1st listing there. -Mash in at about 1.45...
