    When do you add malto dextrin?

    Yeah, if your beer is fine without it I would skip it entirely. When I have a questionably watery beer (in a test batch) I will add the maltodextrin but why thicken up a good beer with it?

    Using dry AND liquid yeast together?

    I had poorly washed yeast that I pitched into wort about 2 weeks ago. I got ancy and impatient and after 36 hours of no airlock movement I pitched some dry yeast to good success. One yeast is going to out compete the other so the only thing thats going to happen is beer :)

    Only use cheap when your filling airlocks with vodka! Do you like scotch? Get something you would enjoy drinking because youre going to be drinking it. In my personal opinion cheap scotch is to harsh except for lauders but I would get a smaller bottle of top shelf stuff.

    I would soak the oak in scotch for the wee heavey, keep it scottish all the way around. But bourbon works for just about everything delicously dark and vodka for a flavorless base. I am still thinking some scotch with that oak my friend ;)
