    Thanks for the reply. I'm using a "TILT" so that's how I know the gravity. Of course, that doesn't mean that the reading is accurate. I will find out in two weeks when I take a real reading with my hydrometer. I'm going to bump the temperature in the meantime.

    I use the 15 minute default. The jagged lines in your graphs are probably due to larger swings in temperature in your fermenter.

    The total volume in the kettle is what I transferred to the fermenter (4.25 gallons). I started the boil with 6.5 gallons. I didn't think my boil.off was going to be that high. I like the idea of eliminating the sparge all together so I'm going to look for a bigger kettle.
