    To be on the safe side I would go with ceramic.

    If it's under 1000W you could put it on a dimmer to dial it in. A little fan for airflow will help even out the temperature throughout the box. Maybe a computer fan.

    I have a practically new Johnson analog temp controller Located in AZ that I would like to trade for any of the follwing: 0-32 brix/SG ATC Refractometer. PID and SSR. Keg set up with at least 1 keg (no CO2 tank needed, I have one). Plate chiller.

    Dissolved salts increase the boiling point and reduce the freezing point.

    "Breaking the hops"???

    Maybe they are confusing the bitter taste of the hops with the bitter taste of carbonic acid in the beer which results from dissolved co2 gas in the liquid. So pouring right into the middle of the glass would get rid of the carbonic acid but not the hops bitterness.

    Just got an offer from a local brewery to do contract brewing

    It sounds hokey to me. The brewery probably wants to make use of underused equipment and saw the opportunity with you as a way to fill their fermenters with pre-payed for beer. Questions come to mind like: Where would you sell it? How much are they going to charge you to brew your beer...

    Thermometer Help Needed!!!

    Boiling point will depend on atmospheric pressure so unless you're at sea level your boiling point will be less than 212F. Go with the 2 degree difference you got from the ice water and you'll be good.

    Will carbing continue if put in fridge?

    I usually start sampling at about a week. I'm very impatient. If there is a thin layer of sediment on the bottom of the bottle it's probably got some CO2 in it.

    Yeasties go to sleep but CO2 absorption increases. Double edged sword.

    I made mine high enough to drain the brew kettle into the carboy. 21" from the floor to the valve on the BK I think.
