    Drom John Shmaltz Sweet Sixteen

My inquiry: "Message Body: I would like to attempt to homebrew Sweet 16. Last night's bottle aged very well. Do you have any pointers? Recipes? -- This e-mail was sent from a contact form on Shmaltz Brewing Company ( http://shmaltzbrewing.com)" Answer: "Hey John, Thanks for reaching out, as...

Drom John Founders Sumatra Mountain Brown

Side by side shocker: NOT ENOUGH COFFEE! SWMBO suggests doubling. I'd at least would add 3 oz. OTOH, the base may be a true clone.

    Crispin Saint Clone

Had the side-by-side maybe a couple of weeks ago. Maple and yeast, check. Apple not so much. Mine was blander.

    Old Rasputin Clone recipe

First taste, side by side, real is cleaner, lighter head; Beer Captured is fuller, tanner head, a bit more bitter. Close enough.

Drom John Founders Sumatra Mountain Brown

Sumatra to secondary today. I further talked SWMBO down to 13.5 oz strong French press instead of espresso shots (helped by the coffee maker going through a vinegar cleaning). 10 shots espresso roast is fabulous in Redhook Double Black Stout, but that's a bigger beer.

Sorry for the late reply. Most online shops have a crushed option. Northern Brewer does. Chicago Brew Werks do not.

Drom John Cuvée Des Trolls Clone

I sparge at 170F with 1.25 quarts/1 lb grain. I use muslin bags, pull out after steeping/mash and place in strainer which then rests on the pot. Pour the sparge water over. Place strainer on a plate and bring wort up to a boil. Periodically (end of a song on Pandora), I pour the drippings on...

Drom John Cuvée Des Trolls Clone

"Partial something" is my phrase for using as up to as close as I can to 6 lbs grain while using whole containers of LME. There used to be snooty fights on HBT about the proper use of "partial extract" versus "partial mash" and my snooty phrase means "whatever." 6 lbs is the most my pot can...

    Drom John Allagash Fluxus 2012

I had no commercial bottle for a side by side, but this turned out very well. Untappd gave me a Fields of Gold (Level 5) badge: Sometimes you need a break from all the hops, fruits, and spices. For any rebrew I might use unmalted spelt, 3942 and 0.6 oz of each peppercorn.
