    omit crystal?

    I have heard it helps with head retention too, but why would you want to entirely omit it? Just about every brew I make calls for a little crystal.

    never had a problem doing it that way. I use pellets mostly and never filter them out. I also go straight from primary to keg and have great results. usually keg condition for about a week ( if I can wait that long ) and the first pint is yeasty but after that its smooth sailing.

    The prior reply seems to have covered all the bases. I would just also suggest you try out some brewing software like beersmith. Once you play around with the number and see the results in real time you will get a better idea of all these things and how they impact your resulting beer.

    OG-FG Question

    I have had some recent problems like that as well and have tracked them to poor wort aeration. I dont see it mentioned anywhere in the thread yet and a good aerated wort should have a better fermentation. Just one more thing to consider.

    Way too many hops by mistake.

    It will mellow some over time like all have said. I have never used that particular hop so I cant be any help as to how fast though. Let sit for at least a week cold conditioning once it is ready and who knows you may start to like it. I have turned into quite a hop head myself :mug:

    I would be surprised if the kit included an actual lager yeast. Never got one myself though so maybe. Did the kit specify a temperature to keep the fermentation at?

    Zen is right, I forgot to mention that your utilization will go down greatly using only one gallon of water, however if you have to choose between doubling your hop additions or not being able to brew at all I would just spend the extra couple bucks on more hops.

    My only worry would be extra sediment when it comes time to serve out of the keg, but you could also saw a little bit of length of the pickup line to help with that.
