    I really want to leave it at least another week, I wanted to make sure. I just read another post similar to mine. Bottomline....let it sit longer.

    It's only been one week in the fermenter, but the airlock stopped. I know that is not a way to measure when a brew is done, so I took a reading. It is sitting at 1.012 with a OG of 1.030. What should I do? It is a cooper's mexican beer kit.

    No way to fix over-carbonation?? I have the bottles sitting in my basement at room temp. I will wait three weeks before trying another.

    You said the yeast will get rid of it with time. Do I need to remove the bottles from the frig? Should I store at a different temp? How much sugar should I have used? Sorry for all the questions....

    I may have done both. I haven't brewed in about four years and maybe got impatient and since I've never bottled before I may have used too much sugar. I used 5.5 ounces in a 5 gallon batch. It had the bubbles similar to champaign. Do you think the apple cider taste will vanish with time?

    Great! I live in a cool area and it was high of 59 today. I made some beer today and left for the evening with some friends. My wife thought she would lend me a hand and place an electric blanket around my fermentor so it wouldn't get too cold! I came home to find a warm carboy! No bubbles yet...

    I understand yeast can go dormant at cold temps, but how about a high temp? Can you damage the yeast if the temp gets above say...90 degrees?

    What's wrong with using clean, sterile plastic bottles if I keep them in a dark place? They hold the pressure and in free abundance.
