    Control fermentation temp.

Absolutely...no doubt..you nailed it. As OP is saying that he’s going to put the ferm chamber in his condo I am assuming his ambient is reasonable and he may not require the same level of control that you bama fellers do in the garage. :) brew on!

    Control fermentation temp.

The goal in my brewery is just good beer. My fermentation temps need to be steady enough to not produce off flavors. In my brewery that means I only need to keep my ale yeast from spiking above 66ish for the first few days when fermentation is most active. My ambient is ~69F so the first few...

    Control fermentation temp.

I will humbly submit for consideration that you dont need a freezer to control fermentation temperature to do most ales. A plastic tub filled 1/2 with water and a couple ice packs during the first 2-3 days is all that is required. So, if you decide to go with the freezer for ferm chamber and...

    Reusing 9month old Lager yeast

The 4month old Notty had a pretty normal fermentation...FG 1.014 which was predicted based on recipe. Gravity sample tasted good...nothing that makes me overly concerned

    Beginner brew equipment

Go to Craigslist or the For Sale forum here and search for home brewing or something similar. There are always people out there selling “getting out of the hobby”. You will get a lot more stuff for the money. It may not be as shiny but that doesn’t matter. Thw world doesnt need another...

Made my first sausages this weekend!

My first post in the sausage making forum! Yet another thing I’ve always wanted to try and I really enjoyed it. I think this is more for me than cheese making. I’m sure I’ll keep playing with cheese but holy cow...the things you can do with $1.49/lbs pork butt and 100ft of casings for $5...

If you could do it all over again...

Absolutely...yes, I would do it again. In fact, my only regret is that my first attempt in ‘98 with a Mr Beer kit was an epic fail and I never tried again until Nov 2013. Many times Ive wondered what I would be doing now if that first batch had been any measure of success. Seriously, as...

    Reusing 9month old Lager yeast

Update: The lagger was yummy. I’m now doing a 4L starter w/ 4 month old Nottingham...it’s a lot less energetic than the 9 month old lager yeast was. It was 36 hours before it began to show some life. It’s now at 60hrs and it’s fermenting steadily but no significant krausen. I’m going to...

    NEIPA dont’s

The 1 pack of yeast got me down to projected FG of 1.012. I didn’t notice clove or off flavors. I added the dry hops and plan to keg this weekend, Curious to see what it’s like in a couple weeks...

    NEIPA dont’s

well....that’s discouraging but not much i can do at this point. Im closer to 1.052 Which should work in my favor. but I’m still at 50% of optimal pitch rate... It will be beer..

    NEIPA dont’s

UPDATE....Not much activity at 24 hr but at 36 I have a nice krausen and air lock activity. I pitched at 63F and Im holding at 65F for now. The data sheet says this yeast can have a little longer lag so maybe this is normal

    NEIPA dont’s

Brew day went well...but...Houston, we have a problem.... I used Lallemand New England for first time....and I’m now reading that the 11g pack is not intended to ferment 5G of average gravity beer? WTF? 3 packs to ferment 5G? I do rehydrate and I did pure O2 aerate ... I guess well see what...

    NEIPA dont’s

Thanks everyone..appreciate the discussion...a couple thoughts.. Yes, I’d like to stay a little lower ABV 5-5.5% Interesting thought on the All malted grains option. I think im going to keep the flaked this time but i will keep this in mind. I dont care about haze to be honest..it’s the...
