    just tried first brew...

    The first week in the bottle my beers usually just taste like sweet hop flavored carbonated water, week two they all get this weird sour flavor I can't place. It's not green apple just sour. Week three and they're right on what I'd expect from the recipe, even better after a few days in the fridge.

    Over Carbonation

    My beer was overcarbed and would gush the first half out as soon as you opened it. Then I left it in the fridge for several days (a week has the best results but it wasn't a gusher after maybe 3 days) and all the carbonation problems went away.

    Beer getting more bitter...is this right?

    my pale ale is doing the same thing, was really really good on week 2. Now its almost ipa bitter. No idea why, my only thought was the first 2 weeks in the bottle it was at ~62 and the last 2 weeks it's been around ~70 but I don't have enough experience to say that was the problem.

    carboy won't fit in freezer with airlock...

    To fit my bucket in the mini fridge I stick a peice of 3/8" id tube into the grommet and then into a bottle of water. Low profile and works just fine. You could use a stopper with the same size hole on your carboy.

    SWMBO got me a year's subscription to byo for valentines. She hates beer but I make her sip each new one I sample and give me a real opinion, not just the typical bitter/cat piss/etc etc. One day I even got her to say an Ipa was good, I think theres hope for her yet.

    False Bottom and its benefit??

    I've got the 42qt polarware with a false bottom. I use it as my mashtun and it keeps its heat just fine covered in a couple blankets over an hour. Then I drain the runnings into a bucket or 2 while I sparge. Once thats all done I dump the grain into the compost pile and transfer the wort back...
