    You mean styles other than Scottish Ales? I'm making a sort of Terrapin Wake 'N' Bake Coffee Oatmeal Imperial Stout clone with this yeast-- it's in secondary and seems to be working fine for me.

    I'm sure this is just another "homebrewer no-no" myth that's a rule... just because someone, somewhere, for some reason decided it was probably bad. Has anyone taken the time to interview the yeast? "Hey! Are you stressed??" Give those yeasties a chance to shine.

    Although you can't get US copyright protection for a recipe you can still sell or lease the recipe to the brewpub. Ask for $15,000 a year or $30,000 outright ;) If it's a serious matter, get a lawyer. Embed the lawyer fees into your selling price. Or negotiate free beer as a part of the sell.

One side is always way thicker than the other and my "seam" is never pretty. Sometimes it likes to come apart when boiling...
