    Priming Corny Kegs?

Yes it’ll be like barrel conditioning, but use half or ⅔ amount of priming sugar. I find the beer taste better than artificially carbonating. after closing lid, attach co2 and fill some gas and release pressure valve to remove oxygen from keg and also to ensure proper seal of lid. Failing to do...

    Adding orange peel to hefeweizen

Either in last 10 minutes or steep in hot water for 15 minutes or soak in vodka and then add the liquid to fermenter during end of fermentation phase. However orange flavour will come with use of little toasted and coarsely crushed Indian coriander seeds. You can add them either during last 10...

    Stuck fermentation in my stout

Like RM-MN mentioned, it should be done. Let it rest on the yeast cake for a week, it'll also help to clear it. You can also take a small sample and add some sugar in it to see if fermentation/bubbling starts, this will confirm fermentation was over.

    Mongo IPA recipe

I get good mango going with almost 100% of pale ale malt with 30gm each of Citra and Mosaic at 30 minutes boil. I add 4 to 5 brown/red young leaves of mango at 5 minutes. They release just enough tannins and aroma. I use brewzilla, I do dry hops with same combination after 5 days. Since it is...

    Dry Hopping

Ideally it should be done after fermentation has lost vigour or else all aroma will be lost. Look for slow down of bubbling, like real slow. Add some weight to hop bag like glass marbles or ceramic pieces or something of stainless steel. The idea is to sink the bag. When hops swell, they float...

    Carbonation Question

Add a Soda bottle in the batch next time. It’ll tighten. You can’t go wrong with it. One week should be good for carbonation if temperature is good.

Homebrew mead has got mould, can I save this?

Hi, the gravity readings aren't helping much here. I hope you might have used yeast nutrient etc as per the recipe and 4 weeks is good enough time for fermentation. You could do a smell and taste test to feel alcohol %. You'd know better by observing bubble rate from beginning to the end. I'm...

Homebrew mead has got mould, can I save this?

Looks like blue/green mold from pictures. These molds are common and belong to the Penicillium genus. This type of mold was used to make penicillin. It’s usually found on foods. You can probably safely skim it off. What are your OG & FG readings? Has fermentation finished? If so, add a campden...

    So who's brewing this weekend?

Usually I don't have that much head space. This time I was planning to over-carbonate to volume of 4.5 so I thought to keep more head room. Thanks for the advise

    So who's brewing this weekend?

I made Amarillo wheat beer. Whole 23 litres of it. I prefer using soda bottles as they're safer.

    Using Mango wood & leaves

Thanks for the response. A valid point but gum from the trunks is eaten in India. The twigs and leaves, used to clean the teeth, are said to be beneficial to the gums, while the bark is said to be useful for toothaches. The astringent stomachic bark is also used for internal haemorrhages...

    Using Mango wood & leaves

Hello, thanks for response. It is hard wood just like Oak. It is also being used to make furniture. Mango grows extremely quickly compared to teak or oak, and it makes it easy to obtain. I guess I'll make a couple of small batches with grain Vodka & see.

    Using Mango wood & leaves

Hello, I was wondering if anyone has tried using mango wood for ageing? Many fruit trees are used for ageing liquor but I don't find use of Mango anywhere perhaps because it doesn't grow in Europe. Same goes for using young mango leaves, which are red in colour. They do smell very nice. Has...

NA Ginger Beer carbed in 18 hours?

    Melomel help?

I'd agree to Toxxyc. Also recommend to add some cinnamon powder as cinnamon is well known anti-fungal and anti-bacterial & also is natural. It can also enhance aroma.

NA Ginger Beer carbed in 18 hours?

If you don't wait for 2-3 days, the fizz will die soon after you pour in glass and it'll be flat. I know it can be hard to wait for a first timer but waiting will be worth it. If you bottle condition at cold temperature, it carbonates nicely. But usually you put in fridge after 3-4 days only...

    Braggot first attempt

A few things I'd do differently - 1. I won't boil for an hour, DME doesn't need it. I think 30 minutes are fine. Also because you're only adding aroma hops & not the bittering ones. 2. Add honey during the boil or at the tail end of the boil. Honey contains several types of yeast. If you're...

    batch age ale?

I have done the same a couple of time and even re-carbonated an stout & IPA. I didn't face any problem. I think as long there is some CO2 present in source bottle, even if minuscule, it works.

    What is the substitution for.....

Use as per kit but since your main concern is to increase ABV, it can be achieved either ways. For example if it is blonde ale kit, it'll better go with light.

    What is the substitution for.....

You can use any or combination of corn sugar, cane sugar, DME (dried malt extract), maple syrup. You can add a kilo to the kit and it'll raise the ABV. I'll recommend to use DME, it'll enhance the kit. Add this during the boil.
