    Okay, thanks for the advice. I've never had orange blossom, but have been meaning to. In another case, if I were to abandon it being a traditional for the sake of having it actually taste good, any fruits in particular that go well with buckwheat that you would suggest?

    I might be mistaken, but from what I've read on the forums isn't it a bad thing to boil the honey? Most threads and replies I've read on here say either to only bring honey to about 145°F to 150°F to pasteurize, or not to heat it at all. Wouldn't boiling the honey for that long cause some off...

    First one's kind of a dark picture. Strawberry on left, tripleberry on right (blackberry, raspberry, blueberry). Next one is the strawberry mead bottled, and last one is a new JAOM bubbling away.

    Good to know. Any idea how much vanilla would be a good amount if I add shortly before bottling? Also, are there any yeasts that work specifically well for cysers? Ive seen champagne yeast in a few recipes.
