    Kolsch Without Lagering?

I brewed a kolsch earlier this year without the ability to lager...I bottled, and bottle conditioned (after primary for ~6 weeks @60)...after bottles carbed I put a bunch in the fridge and after a month tastes great! After finishing the initial batch I put in the fridge I put more in...tried...

    White Labs and Kombucha?!

I'm interested to see if/what they come up with. I am in the process of growing my own SCOBY from a few bottles of GT's. It is coming along nicely, but I can't help think that there is just such a crap-shoot of organisms. I'd like to see a knowledgeable *LAB* come up with a defined SCOBY...

    White Labs and Kombucha?!

looking through the White Labs website I came across this page. Is White Labs getting into (or already in) the Kombucha SCOBY business? Anyone know if they will be supplying to homebrewers? http://www.whitelabs.com/food/kombucha.html

    Favorite Part of Homebrewing

This was a tough poll for me to answer...I seem to spend more time (and enjoyment) reading about beer, tweaking recipes, reading forums (duh!), than I do any other aspect of brewing/drinking, so I guess I enjoy that most. Sort of like the anticipation is sometimes better than the actual thing...

    Saison du BUFF help

I'm brewing this tonight (using brewtimore's recipe), but subing in 3711 for the yeast, and Sorachi Ace for Citra (can't find those lately!). Any advise from those who have brewed before me? Thanks!

    Signing in from Montgomeryville, PA

Welcome! I used to live in Montgomeryville...now live in Cheltenham, but still go out there to get supplies from Keystone Homebrew (they just moved to a giant new shop) If you are looking to get into homebrewing, stop by there and take a look. they are very knowledgeable and helpful, not to...

What To Do With My Jolly Pumkin Dregs

Jolly Pumpkin dregs are awesome! I've personally only used once, but you'll find lots of folks here with similar, great success. I made a 1L starter and pitched mine into primary, and it took off like rocket (~6 hour lag!) tart and funky in a few months...have been waiting on it ~8 months so...

    Beer Cocktails?

Black Velvet - Stout beer and Champagne. You'll have to play around with the ratio and with the variety of stout, but I remember these being very tasty (haven't had in years, though).

old washing machine mash tun 80L plus

I was disappointed by the picture...I didn't read the original post carefully and had thought you were mashing /sparging in a washing machine (like a working washing machine with the agitate cycle for mash and spin cycle for sparge!) now that would be awesome!!!!

Portuguese vs Colonna for Belgian Bottles?

If you search, you can find a number of threads on this topic. HERE is one I replied to recently. I only know about the Colonna corker/capper as that is what I own, but it seems to work well, and is inexpensive (especially compared to the champagne corkers). capping (both 26 and 29 mm caps)...

    Sealing brew-bucket lid

I bought these lids Feom us plastics (and 7 gallon buckets to go with them) last week. They seem to really seal the buckets. I filled the bucket with a gallon hot water, put the top on and shook it. I could see the lid start to bow under the pressure. I got a good pfffffftttttttt when I...

    bench capper and corker?

I just bought a colonna capper/corker and did both for the first time using it on Saturday. I had corked a few Belgian bottles (cork and cage) using instructions in another thread, and capped the rest. I did some regular 12 oz bottles and some 750 ml champagne-style bottles (with the larger...

Shout out to Aqua Pennsylvania (local water dept helps)

So I decided this is the year to learn about how my water affects my beer. I know it is important, but have focused on a lot of other factors in my beer production, but cannot ignore the water anymore. SO...I went online to my local water dept site (Aqua Pennsylvania...a subsidiary of Aqua...

    Sick of buying skunked beer

Saison DuPont and Pilsner Urquell are two that I can rarely stand to buy due to the high skunk rate. Having had both many times at/close to the source, I can say that shipping / handling are often not kind to these beers!

New White Labs Strain - 670 Farmhouse Blend

wow! There doesn't even seem to be any info on the Whitelabs site about this yet (other than announcing that there will be 3 new strains for 2011 including an American Saison, and the platinum release schedule says not until May. very anxious! don't see it at any of the online retailers yet...

First decoction and horrible efficiency. Help!

So I brewed a batch of 'The Pious' traditional recipe over the weekend, and ended up with a stinking 55% efficiency! Worst I've ever had by a long shot, but this was my first decoction, so I'll chalk it up to rookie mistakes. I'm hoping someone can help point to my worst offenses. Here is...

South Jersey/Philly Group Buy... ROUND 12!

That would be GREAT. I was thinking of stopping by Keystone Homebrew on Friday night (I think they are open to 9), so I could make it by your place either before of after if that is okay by you. I'll PM you and we can make arrangements.

South Jersey/Philly Group Buy... ROUND 12!

Turns out I can't make it to the pick-up tonight. Can anyone pick up for me? I just got a single sack of Franco-Belges Pils malt (it is pre-milled, so will probably be opened, and stitched back closed...last time they used bright yellow thread, so it was easy to spot among the other bags) I...

How to recognise a Belgian warship

A Belgian friend of mine shared a bottle of beer with me that was brewed / distributed ONLY in a hospital (for the patients health, I presume!). He got the bottle as a gift after doing some consulting work for the hospital. it was a few years old, and I'd call it a Belgian Pale Ale...needless...
