New England IPA "Northeast" style IPA

Braufessor or anyone else in this thread: Do you have any information about achieving an Alchemist water profile for this batch? Specifically I'd like to achieve something like the water profile of Focal Banger. Looking around some Heady threads I've arrived at a massively hard water profile...

Pitching on a very old mixed cake

Hi All, I decided I wanted to re-use an old yeast cake from a sour to ferment 3 "side gallons" from an 8 gal batch. I figured it would be a mix of the dregs (Brett B) and the original saison yeast I first fermented with. I, very stupidly, did not think about the fact that this cake is...

    Saison Cottage House Saison

Does anyone have opinions on how to add the black pepper to the fermenter? Did not have any peppercorns on hand on brew day.

Cold crashing in regards to the yeast cake

Recently I made a simple pale ale that would generally need about 2 weeks to finish fermentation. My questions is, how early is too early to cold crash? I took a gravity sample after 5 days of fermentation and the beer is at target gravity. I understand that racking a beer off of a yeast cake...

American Pale Ale Citra Pale Ale

Took an unreasonably early sample at 8 days. Numbers are perfect, 1.012 or 1.013 temp corrected. Pretty happy at hitting 1051 and 1013 on my first true all grain. Sample was cloudy and obviously needs more time. Kind of wish I had dumped in some more hops late, but maybe the dry hop will...

American Pale Ale Citra Pale Ale

Tried this with slight alterations today. Subbed base grain with 11# of MO, bittered with .50 oz Warrior (LHBS out of Magnum), and used Centennial/Simcoe as my 10,1,0 and dry additions. Rehydrated some S05 and pitched a little warm. I'm trying to create a nice house pale ale to go on tap in...

    Faucet place holders

That's what I'm looking for! Just couldn't figure out what those things were. That's ingenious. Thanks.

    Faucet place holders

I recently finished my keezer project. I drilled holes for four taps but I'm only running two right now. I've currently got grocery bags stuffed in the tap holes for insulation. I've seen some similar projects on here before where people have secured a nice metal disk in the empty faucet spots...

American Pale Ale Three Floyds Zombie Dust Clone

Racked this to secondary today. Gravity reading was at 1.020. Wonder if it will drop lower or if it's done. It's only been in primary for 10 days so I'm hoping I get a few more points out of it. Added 3 oz Citra dry hop in a 1gal paint strainer bag with some marbles to weigh it down...

    first biab

If you open the pot and find your temperature low, you will need to stir continually if you turn the burner on to add heat. From my understanding it is not to make sure the grains are getting wet, but rather to equalize the temperature throughout.

American Pale Ale Three Floyds Zombie Dust Clone

Did this today as my 3rd BIAB attempt. I'm still struggling a bit with gravity readings and volumes relating to the BIAB process. I ended up with a little less than 5.5 gallons reading at 1.070. Topped off with some water to try and get close to target volume and 1.065. Ended up getting the...

Tell me I'm dumb (Repitching on yeast cakes)

So I've just done my first bulk order of hops from Nikobrew. My plan is to first brew the great Zombie Dust clone by skeezerpleezer, then pouring Yooper's DFH60 on top of the yeast cake (I plan on using WLP002 as a sub for Wyeast 1968 -- but both second brews use Pacman and I willl use this if...

Weissbier Bee Cave Brewery Bavarian Hefeweizen

Quick question... for some reason I ordered 2 oz of Hallertau instead of 1 oz. I don't have any way to vacuum seal and I'm not sure I'll be brewing anything that calls for Hallertau soon enough to keep them fresh. Anyone have opinions on how dry hopping with the extra 1 oz will turn out? I...
