Me too! I hope my wife doesn't mind. Welcome to brewing, it's fun. Brewing in Florida adds it's own challenges when it comes to maintaining fermentation temps, but we get around them.

Meads, Wines and Barley wines come to mind first. There's probably hundreds of like minded posts where this topic has been discussed a lot. You'll need something with high enough alcohol content to be able to age out over that much time.
