    IMHO, Nebbiolo grape wouldn't taste to good with oak flavor. The tartness of the grape may taste off with much oak. Keep in mind I know nothing of wine making, but I do like the Piedmont wines.

    Thanks for the advice. My next step is to acquire a plate chiller + pump. I'm not a fan of the copper tubing wort chiller. It take just as long as an ice bath and cleaning the copper tubing isn't my idea of a good time.

    Try a kit from your local brew store. If you don't have one, try www.northernbrewer.com. They have some good kits. My advice would be to avoid the adjuncts for now and stick to hops and malts. Good luck and Cheers

    A question for those that are using a chest freezer and temp controller.

    No cuts and no holes. I'm just mindful to work the wire flat when closing the lid. A notch in the stripping would let more air in, so less efficient.
