Anybody use Omega Hefeweizen Yeast? OLY-021

Pushes upper 80s, than goes to what degree at night time? Assuming no temp control, that could be some major fluctuations in temperature making unhappy yeast. Seems like it would be banana bomb, never made one or had one maybe I would like it. I had hefes at breweries with the bubblegum "off...

Anybody use Omega Hefeweizen Yeast? OLY-021

Wow that is cooking! When I 1st started brewing and had bad temp control I think one of mine fermented at that range. It was pretty sweet but good!

Anybody use Omega Hefeweizen Yeast? OLY-021

I prefer 68F seems good balance for me. I always have used the whole liquid yeast pack. Are you saying you use 75% of the pack? Always wanted to try that

Anybody use Omega Hefeweizen Yeast? OLY-021

Old thread but.... I have had no problems with the liquid omega hefeweizen yeast. I have switched back and forth many times from oly-021 to wyeast 3068 and they both are pretty good. Good estery flavors at high ferment temps as indicated with the omega. Pretty wild fermentations as well always...

    Constantly have low gravity

I hope you figure this out. Im newer to homebrewing and have not experienced this issue but can tell you it isn't distilled water making your numbers bad. However I did my first AG batch with distilled water and no water chemistry and the numbers were good but it tasted grainy I think from ph...

Fermentation chamber freezer! Am I doing it right?

Thanks for the tip - i will keep an eye on it. From what I can tell so far is the probe is doing a good job - within 1 degree of actual fermenter temp, and im good with that. Confirmed by looking at thermometer stuck on side of carboy. I taped the probe really good behind the paper towel and...

Fermentation chamber freezer! Am I doing it right?

I had just bumped it to 68 before I saw this. 66 seemed too cool. I feel better about this now

Fermentation chamber freezer! Am I doing it right?

*Is 66 degrees adequate for mid range flavor with the omega yeast?

Fermentation chamber freezer! Am I doing it right?

Hey y'all I just got my fermentation station completed for the most part. What it consists currently is a 7 cu. deep freezer, thermo wrap, and inkbird temp controller. I put a fresh batch of 5 gal hefeweizen in a 6.5 gal carboy thats sitting in there. As far as the probe goes, I taped it on the...

    First AG hefe taste grainy/barky

Right on. I'm on well water that is rather good drinking water I wonder If I can just use that with some acid? I hav see a digital ph meter and will be paying more attention in the future. I think if you are brewing generally the same style, product, water, and set up then the recipe for the...

    First AG hefe taste grainy/barky

The head on this AG brew is phenomenal compared to the extract kits I've been doing

    First AG hefe taste grainy/barky

Looks like lots of debate on mash ph. I didn't think it was that big of a deal. Funny thing is I ran an identical recipe with my well water and no water chemistry or analysis 1 week after brewing this batch. Its still fermenting away but I wonder if the flavor with be similar compared to all...

    First AG hefe taste grainy/barky

Thanks! I hope so! I think I undershot my OG 1.044 (target 1.050) because of too much water mash. But it made FG 1.011 4.5% beer. Is that safe to assume good conversion? I laughtered about 2 - 3 qts and it didn't seem too bad maybe a little hazy but not grainy. I also assumed a few grains...

    First AG hefe taste grainy/barky

I agree possible ph issue. Anyway to confirm that at this point? I put 3 bottles in the fridge on day 10 which was actually friday than I tried one after a few hours of in the fridge. So today being day 13 bottled - 3 days in fridge - I just tried one and it does seem a little less astringent...

    First AG hefe taste grainy/barky

I used all distilled water and didn't change any of the water chemistry. Should I have added salts?
