    Those proportions look good to me. I think yeast health and fermentation conditions will have as much to do with attenuation as sugar here.

    I'll say that, in a keg, this beer is only starting to decline after 2 months. My experience in bottles is about 2 weeks.

    I don't think food grade makes any difference unless you are storing things in a super hot location.

    I've beaten the crap out of my cereal killer for 5+ years now. Had to replace the bearings because I was cleaning with compressed air, but going strong now that I moved to the vacuum.

    Wanting to switch to electric

    If you're buying a new house, just wait until you can do 240V. But I am at the point where I don't even want to do a 4 hr brewday. If I really work at it, I can get a normal beer (no hopstand) into 3 1/2 hrs on my 240v kettle. It only cost me $500ish to build, including wiring (DIY).

    I built my own a while ago before the advent of all the plug and play options. It was a learning process; I definitely would have bought a preassembled system if it had been available.

    First time using fresh hops

    Yep, you'll be fine. I have 6 hop plants and have been brewing with them for 6ish years. Great for aroma, not reliable for much else. I make a garbage pail ale once a year with all of my hops in the whirlpool; gave up trying to brew to style with them. Let us know how it turns out!

    I agree that drying is best for long term, but if you're going to use them in the next few weeks/months, I haven't had any trouble freezing. I have 6 plants and have been growing and using them for 5+ years.
