    If one were to leave the recipe book behind just for fun, would mixing hops that have different profiles, like say Cascade with Chinook give and interesting flavor combo, or make a muddy, bitter mess?

    couldn't I take almost any recipe and double the hops used at the start of the boil and make it a 30 min boil? Assuming all other hops are to be added in the last 30 min., which is usual, just double the bittering hops at the beginning of the boil, 30 min, and make it 30 not 60, no?

    I can only get ingredients by the .5 lb. and didn't want to waste anything , so for grains used .5 lbs crystal 50-60 and .5 light roasted barley. Its almost like a light stout if there can be such a thing.So far it is well revieved.

    I brew with the lid on as much as possible to retain heat. Never thought of DMS. But from what I read the off taste is not DMS. How great would that be if this is the issue? It's a sour / bitter , not corn or cabbage taste.
