    Very Dark "Beard"

How old is it and what kind of tea and sugar did you use, also how much sugar. Also what temps are you fermenting it at? Mine always tastes like tangy or tart sweet tea, and if I let it go for a while apple cider vinegar

First lager, bottles gushing opening at room temp

Give it 2-3 weeks and then drop the temp. You want the co2 to really absorb into the beer. Quick edit to say I didn't catch the final gravity. That is kinda high for a lager to finish at, it could cause a problem with overcarbing.

It's normal. My 'bucha jar has about an inch of those settled on the bottom.

All Grain: 90 minute boil vs 60 minute boil

A 90 minute boil allows you to boil off DMS if you are using a pilsner malt. It gives a corn or veggie flavor to your beer. I use 90 minute boils because it lets me use that extra half gallon of sparge water to maybe boost my efficiency up a little bit. I have done lots of 2 row malt, 60...

Cream Ale Cream of Three Crops (Cream Ale)

Starting a batch of this today with Pilsner malt and noble hops. Going for the true American Lager/Pilsner flavor. I will also secondary with amylase and gelatin to really clear it up.

Double IPA F*ck It, We'll Do It Live Imperial IPA

I think I went broke just reading the hop bill. I would love to try this if it could be bottled and served in shot glasses.

    "Skunking" -- Fact or Fiction?

I'd use invisable bottles if I could get my hands on some.. Like all of the wise brewers above said, Keep them in the dark...

    Worst part of bottling

I've had it happen once. No problem because I bottle on a large bath towel. I have broken bottles opening them using other means than a bottle opener. I'd much rather bottle because it is too hard to carry a keg around as say, camping, fishing, and countless beer drinking activities away...

the most you ever paid for beer

I paid 9 dollars for a Miller Light at a Nascar Race once. It was 94 degrees out and the stands were all aluminum. I would have given 20 bucks for it at the time... For a real beer I paid 12.95 for a bottle of Chimay once.

    "Skunking" -- Fact or Fiction?

I can't give you a bunch of scientific mumbo jumbo, facts or fiction. I just know that ALL bottles will skunk if exposed to enough light, brown ones just take longer than clear ones. The easy cure is keep all of your bottles in boxes or storage where they won't be exposed to excessive light...

How to get hieneken labels off?

I love green bottles. I like to see when they are full so I know when to turn off the bottling bucket valve. I intentionally buy lots of St. Paulies Girl, Becks, and Heinies just so I can bottle my German lagers in the correct bottles. I also just keep them out of the light and sun. I peel...

    Summer Cream Ale

I'd use the cluster as a bittering hop and try .5 oz Saaz or Halertau at 15 min. left and maybe 1/4 oz. at flameout. I wouldn't be afraid of carapils. I use 4 to 8 oz in everything I brew for head retention. I have never used honey malt so I can't comment there. Flaked barley definately a...

I Have An Infection - Can I let this ride and create a sour?

Wait it out, I don't see alot from the pics, is it getting dry powder on top or is it just little air bubble islands floating in the ferment. I've had several ferments that I dry hopped and they looked pretty scary until everything settled down. Maybe the air bubbles around the hop bag are...

    IPA Recipe

Have you looked through the India pale ale section of the recipe forum here yet? Lots of real good ones posted. I have the Two Hearted Clone dry hoping right now from there. Gravity samples tasted heavenly...

    White dust particles, infection?

Hard to tell from the pic but to me it looks like little chunks of krausen floating around. If it is a lactic infection they will form almost spiderweb attachments and eventually cover the whole top of the ferment with a dry powder. For now you just need to wait it out.

    To secondary or not.

I secondary for 2 reasons. 1) To get my beer off the precious yeast cake so I can harvest for repitch. 2) I primary in a brew bucket and would much rather secondary in a plastic or glass carboy with an airlock. I know lots of people here like to not disturb their beer and just keep it in...

Cream Ale Cream of Three Crops (Cream Ale)

I think these light recipes are great for noticing subtle differences in hops or different malts. CO3C fits the bill perfectly. I like to follow the main malt bill and change hops to see if I can tell the difference. I'm going to go crack one and get ready for the halftime show.:mug:
