Campden + Iodophor = hello bugs???

Let's say yes and no. I'd like to, but here in Mexico it's not that easy to come across distilled water, maybe at some drugstores but not at Walmarts or convenience stores like those. Also, for the purpose of sanitating bottles (about 48, I have no means for kegging right now) I make a bucket...

Campden + Iodophor = hello bugs???

Hello everyone I'm concerned with my new practice of using Sodium metabisulfite for removing chlorine from my sanitizer mix with Iodophor. I'm trying to meassure the campden amount very accurately but sometimes I just make a very small sanitizing solution so I add a very small pinch of the...

Brewing water mineral concentrations after boil?

Hi everyone, I've been reading a lot about water chemistry and I'm interested in making some slight adjustments to my water (RO) since I found I have very low mineral content. So, I started using Brewer's Friend water calculator and first, though I noticed some calculations to be off. The ppm...

Yeast with character for APA and IPA

Excellent input on those yeasts! sometimes it gets hard to find experiences/yeast flavor profiles around, just the usual "It's great" and all that. I actually have a pack of WL051, I'll be using it in my IPA this weekend and hope to fall in love with it as much as you did ;) Thanks a lot for...

Yeast with character for APA and IPA

I couldn't agree more; before liquid yeast, I could only desire getting some. I also agree, just by looking at the catalogue, that WL and dry yeast is plenty to do anything you crave.

Yeast with character for APA and IPA

Too bad I can't get any Wyeast here. I'm from Mexico city, and there's a small brewery in Tijuana that gets the yeast from San Diego and ships here but they only have the Whitelabs catalog.

Yeast with character for APA and IPA

Interesting, any commercial examples from which I can bottle harvest maybe? never heard of that one. I've also read that 1318 is great but unfortunately I can't get any wyeast yeast around here :/

Yeast with character for APA and IPA

Thanks, I was staying away from the highly popular 001 because I even watched a video that made a comparison between that and US05 and said they were pretty identical, but I might give it a try and make my own judgement :tank:

Yeast with character for APA and IPA

I finally got my hands on some whitelabs yeast where I live, but I'd like to save some time and $ by not having to purchase every single strain and experiment with my recipes so I come here with the wise brewers of the forum for some advise. I'm looking for a LIQUID yeast that gives a nice...

Dry yeast with lots of character

Sounds like a plan to me. I liked windsor but I kept it too cool I think. I'll try at room temp one more time like you suggest ;) thanks for sharing

Dry yeast with lots of character

Yeah I remember reading that post once and started using 05 instead but I gave 04 another chance and it's been doing good. Not outstanding as I wished but at least I'm not dumping terrible batches :p Thanks for your replies!

Dry yeast with lots of character

That was my other option, I guess I'll have to read up on culturing from the bottles. Problem is, lots of beers that get around here filter or bottle condition with a different strain :/ Thanks for your comments

Dry yeast with lots of character

Excellent, I'll try to get my hands on one of those If I can :mug: Have you had bad experiences with s-04? why would you stay away from it?

Dry yeast with lots of character

Hello everyone! I've been brewing for a bit longer than a year with some good results. I've brewed APAs, IPAs, plenty of stouts, porters and some homebrewing experiments. Where I live (Mexico city), our selection of yeasts is pretty limited in regards to liquid vs dry yeast. I have almost...

Thanks a lot Lorena, I'll give it a try when I brew this again for sure!

    Improving body... Even more

Interesting proposal of a 45 mins mash. I've been doing 1:20 mashes to allow for full conversion of starches but now that you mention it, I might give it a try with 45 or an hour only. Are 45 mins enough for full conversion? never tried such a short one. And yes it sounds like a miracle that...

    First Brown Ale help

Sounds pretty good. A bit more sweetness of the crystal will even out the smokiness I believe. Otherwise the flavor might be a little harsh

    Improving body... Even more

Sorry sorry I missed a lot of details here. I mashed at 156 for an hour and 20 mins. Fermented with US05 at about 62 - 66 for 3 weeks, then bottled, primed and tasted after 2 weeks. I don't have the water profile available, I use bottled water but here in Mexico those analysis are pretty much...

    First Brown Ale help

Sounds pretty solid to me! if you want more maltiness to come out of there, I'd probably add some 5% of munich or victory for some breadiness that matches perfectly with a brown. Also it feels like the beer will be a bit dry, I'd bump up the caramel a little bit or mash at about 155 - 156 for...
