    Screwed up my first batch but I will NOT be discouraged...

    I steep my grains at 160 - 163 with no issues at all. I believe 170 is the magic number to avoid. Make sure that the water you are testing is thoroughly stirred as you might be measuring a hotter or cooler spot depending on where you put the temp probe.

    I wouldn't touch this for any reason (not even to take a hydromter reading) until it has sat in primary for three weeks minimum. Patience is key.

    +1 to what everyone else is saying here. Everything I brew sits minimum three weeks in primary. Most times it's sitting for four. This will be when I take my second hydrometer reading (the 1st was to get the OG). Been bottling at four weeks but haven't brewed anything that required secondary...

    So Frustrated, Bottles Fail to Carb (again)

    I gotta say it seems more like something is amiss elsewhere besides the temps. Been bottling and storing in my basement which averages low 60's and have no issues whatsoever with carbonation. I'm busting them out and drinking after two weeks. Three is even better.

    Wasn't trying to rush ya. I love watching a build in progress, that and it helps me refine my decisions as to what I'll do when it's finally my turn. This was more of a way to prod ya to post pictures and get my subscribed to the thread :)
