    That looks like slurry pulled from the bottom of a quarry. Uh, yeah, you are done. Stick with the RO and build up as needed. Although, you may be able t pull a Burton profile out of that, if that is your thing.

    You likely did under pitch, but it will be fine. I have had IPAs and Wheats ferment for 3+ weeks. In fact, they were some of my best brews.

    Dry hopping after being in secondary for a week

    I believe in taking your time. I usually do 2-3 weeks in the primary, condition for 7-10 days in secondary, and then add dry hops for another 5-7 days. Three more weeks in the bottle - drink and be merry.

    I have dry-hopped my ESB's with Amarillo with great success. Not sure how it will go with your Challenger and EKG, though, as I do not use those hops very much.

    airlock won't stay in carboy

    Life could be worse......first batch (circa 1993)....I pushed the stopper into the carboy. I can't remember how I got it out, but age will do that to ya.
