Cracks in bottle necks after capping?

When I bartended back in the day, a broken glass or bottle meant we emptied all of the ice bins even if it occurred at the other end of the bar. Glass shards and digestive tracts do not play nice together. Dump the bottles and do not look back.

Soooo.... I "found" a 3yr old Carboy in the back of my basement....

I would try it cautiously. It will either be vinegar or the best cider you ever had. Keep us posted.

    Taste threshold for phosphoric acid

I brewed with similar water to yours for years before moving to an RO system. I have used citric, phosphoric. lactic, sulfuric ad hydrochloric acids....sometimes all in one batch. You will find IPA's to be your friend as they can take a lot of sulfate. To answer your question, keep your...

    What would you tell yourself?

If I could go back to 1994 and speak to my 26 year-old self brewing his first extract kit, here is what I would say: 1 - Welcome to the hobby! To satisfy your inner engineer, you will likely spend thousands of man-hours researching, analyzing, experimenting, building and welding in addition...

Matching finished water profiles - Bru'n

Thanks for all of the replies guys. Lot of food for thought here. I found that link early in my research, Pete. Great info there. I also recommend Kaminski/Palmer's book: Water. I am brewing all-grain: 5, 8 and 10 gallon batches. While my BO rate is not crazy - 1.0g/hr, I have been doing...

Matching finished water profiles - Bru'n

ok, maybe I have confused some terminology. Say I settle on a profile of (ppm) 50 Ca, 5 Mg, 0 Na, 60 SO4 and 35 CL. This is what would head into my kettle/tun and would match up the Bru'ns final water profile line.....NOT what goes into the fermenter as I was thinking. If so, you guys have...

Matching finished water profiles - Bru'n

Hopefully, someone can help with a concern I have trying to match water profiles for my beers. After considerable research, I have come up with desired water profiles for for each of my beers. I then use Bru'n to help me figure out my mash, sparge and kettle additions. My question is...

Stupid n00b question about keg headspace (without CO2)

Any welding supply shop will be able to fill your tank.

    Which Bourbon Which Kit

That is pretty good on your friend's part. It would challenge me to blind taste test him, but then he might take offense to that.

    Which Bourbon Which Kit

Hate to say it, but you won't be able to tell the difference between Makers and Knob once it is in the beer. I'm sure I could tell if I thru in Jim Beam...would never do that, of course!.....But being able to discern between decent bourbons has all been but impossible for me once I have added...

How do you guys keep people from taking your good beer at parties?

My problem is not my friends.... but me. I may go thru the gyrations of hiding the rare beer, but as soon as I get a little typsy, I will start breaking out the "special stash" and doling it out. Usually very chagrined come morning....:D

Can I add water to my fermenter after the first day?

Best not to add water now since your fermentation has already started. Doing so will likely stop your fermentation. I would personally drink it as-is. Your will just have a "bigger" beer. If you are intent on reducing it, you could try adding water at bottling. I would pitch another...

    Two weeks of activity

All of my big wheats take a long time to ferment, sometimes 3+ weeks. Especially if I use a Kolsch such as WLP029. You are doing fine. After all activity has ceased and you have a stable FG, let it sit for at least another week, so that the yeast can clean up after themselves....so...

How much water is required for conversion

1.0 to 1.5 qt/lb is the range most brewer's shoot for. I tend to be right at 1.2 qt /lb most of the time. 1.0 qt/lb tends to get a little thick sometimes making it more difficult to stir your mash. Unless you have some other volume management issues going on, shooting for the middle of the...

    Any brewing Firefighters out there?

I put in ten years. Miss the lads, don't miss the smoke or extrications.

    Wagon Wheel

Being from the Bluegrass, we are already ole friends. And....as you well know, perspective is derived from beer. True wisdom is derived from bourbon! Two more years and I will be back, BTW....Counting days...

    Wagon Wheel

I certainly do not begrudge Darious his success. It is a watered-down version, however, meant to appeal to the masses that are disturbed by a little twang and some fiddle. As such, it is far inferior to Old Crow's version. sometimes, life isn't fair, although Old Crow has certainly enjoyed...

    Wtf usps???

I have had too many packages disappear via USPS to believe that they are being just "lost". I now always request that sellers use Fed Ex or UPS. BTW, in each instance the seller made good on replacing the goods....

    Cascade shortage, solution here ->

Apparently, it hasn't shown up fully in the supply chain, but could soon. Thanks for confirming. I had heard rumors of such, but was hoping there was nothing to them.
