    Hot Wort Filter Before Plate Chiller

    I use 2 30/30 stainless mesh screens 'sewn' together with stainless wire around my dip tube that goes to the bottom of my kettle. Works wonderfully. I've had as much as 14 oz of pellets on it without an issue. I pump it through a counter flow chiller though. Not a plate chiller.

    Dry vs Wet Lag time

    I myself notice a little more lag in the dry yeast that I rehydrate. I get a good fermentation , but it seams to take longer as well. Granted, I am the lower end of the temp range. Low 60's. But its clean and I don't mind waiting because the final product is good!
