    What should I get

    I had a monster mill and sold it... never saw a difference in eff or quality of beer.. plus it made a completely mess with the dust it produced. IMO I would stock up on brewing ingredients for the fall! Plus I'm not sure what quality of mill you are going to get for $100.

    First, you won't get disqualified... the judges are going to judge the beer based off the category guidelines it was entered.. meaning if you enter a beer into a category that has wood character but this is not represented in the description you will lose points for this... and vice versa...     Yeah, I don't think it makes a difference when you add it.... I would be more concerned as previously mentioned about the fact that distilled water has no minerals... this could be good or bad depending on your brewing water. If you have topped off with regular water I would probably use spring...

    Honestly, I think you would be good to go with any true English Hop... I would be more concerned with the total IBU's and the different additions you want to add to the beer....

    It's a very versatile yeast... Read the description / profile of the yeast. If that sounds like a characteristic you would like in the final beer than brew with it.

    Denny Conn actually is rated to attenuate better than 1056. I use it in my amber and mash around 155. I would say go with Denny Conn or just the standard 1056 for a nice hoppy red.

    Brewed a ton of beers at this point... going for my first 100% Brett fermented brew. Going with WLP644. I'm not brewing any particular style. Here is what I'm doing: 10lbs Pale Malt 5lbs Red Wheat Magnum bittering to 35 IBU Citra Hops 1/2 oz for flavor and aroma Mashing for 1 hour at 158...

    Yeah that is a lot of honey malt. I treat honey malt like a spice a little really does go a long way. Also that flaked rice isn't going to give you much body at all. It could be a very thin honey tasting ale, but if that is what you are going for sounds like a solid recipe!
