    Did you pitch the same rate of yeast into both batches? In your situation, there are 2 carboys with must of the same gravity, but of different volumes.     when I cold crash, I set my chest freezer to like 10 C which is 50 F for about a day. it definitely helps to compact hops/yeast. I would say go for it, I think it will at least help the process start.

    that seems correct. you will be using a lot of simcoe though. a positive of boiling for an hour, which would be typical for a 5 gallon batch, would increase your hop utilization and you wouldn't need to use so many hops. you can save a few bucks by doing that.

    those don't look like any hops I have seen. the flowering part is similar, but the leave and bine don't look like hops to me. hops have small hook type things on their "vines" that grab onto things. those look too smooth.

    I would assume the system isn't BIAB, but a re-circulating mash with some other sort of sparge step. sparging is just rinsing grains. mashing out is heating the grains to a point where all enzymes denature and conversion is halted. both are different steps and do not take the place of each other.

    i don't think it is too far out of the realm of possibility. I believe a lot of Baltic porters are fermented with a lager yeast. I would assume yours would come out similar to that but smaller.
