    Blonde w/ Mate and Lemon. Advice?

    I love drinking mate, and have thought about adding it in a beer also, maybe subbing some of the hops. But keep in mind that mate contains caffeine, i feel more from a mate than a cup of coffee. Might be nice with an "energy beer" though :) keep me posted about how this turns out!

    gonna try my hands at a clone of Omnipollos Leon. Its like a belgian ale, but hopped with simcoe and amarillo. The original is fermented with champagne yeast, but im a little noob and nervous about that, so I'm thinking of splitting the batch and ferment half of it with belgian ale yeast instead.

    I had a saison fermenting in my wardrobe, around 23C (73F) and it turned out perfectly. Dont know if it would have been even better with higher temps though, but I passed my estimated fg (should have been 1.014 according to beersmith, got down to 1.010). Fermented with WLP566.
