I based it off of @Dgallo recipe and used 76.9% 2-Row 20.5% Spelt 2.6% Honey Malt and a pound of Dextrose right before flameout. My OG was 1.075 and FG 1.020

If you have been reluctant on using Spelt, don’t be! At 20% the mouthfeel is pillowy soft and silky.

Yeah, that sounds like it. My last NEIPA I wrecked with not letting the yeast finish it’s job after adding the dry hops. It was a straight up diacetyl bomb. Which is a shame since the first week on tap it was the best one I had brewed. Oh well, lesson learned. Now I will only dry hop cold. Glad...

Spelt Double NEIPA coming along nicely. Does anyone use a Fermzilla? I keep forgetting to put the gallon marker sticker on and have no idea how much wort I have in it. Any guesses? I’m thinking around 6? This is also myfirst time ever keeping a fermenter in a temp controlled fridge.

Ha! That’s awesome! This is straight Nelson diesel and I LOVE it. Such a solid brewery.
