    What does a brew store need to be great?

    Being friendly and welcoming. The LHBS I used to go to in Chicago had staff that was miserably rude and cold. They thought they were experts and that I knew nothing because I was asking questions. Needless to say, I stopped going there unless I was in a major pinch.

    REALLY long primary. Beer still ok?

    You might have some off flavors from dead yeasts and some processes they undergo once they die but who knows...you may have an awesome beer. Try it. Let us know!

    Use of orange peel...how much is too much?

    I make a hefeweizen with orange in it. What I do is use the zest from half of the orange and then put some of the whole orange into the boil. I have made it several times and each time I make it I can hardly keep it in bottles or kegs for a week before my friends and I drink it. I am brewing...

    Hey folks. I am sure there is a post out there about this but i dont have the time to dig around. Can i use regular table sugar to carb my bottled beers instead of corn sugar?

    Adding Wort to Secondary?

    Fine idea. I do this fairly regular to avoid the same thing. You can also transfer to secondary right at the end of primary fermentation so that when the beer has been transferred to secondary it makes another layer of CO2 while finishing the last of primary.

    Cloudy Partial Mash (Pics)

    you should be fine. Just let the beer sit untouched for a week or two and I am sure you will be very pleasantly surprised. Are you going to dry hop? Many dry hopped beers are very cloudy due to the hops so if you are going to dry hop dont worry about the clarity.

    I was in the same spot just a little bit ago. I ended up buying both and i will tell you that getting a bigger kettle and burner is the way to go. Kegging is awesome... if you have money to spend on the endless list of stuff you need for it. Check out williamsbrewing.com I got their 10.5 gal...

    Northern Brewer ESB secondary?

    All Northern brewer kits typically call for secondary. i rarely rack to secondary unless i want clear beer or adding stuff like cocao or vanilla or if i have a big complex beer. I also re rack when i have no bottles or kegs! Never hurts to rerack but with an esb you could get away with a 14 day...
