I'm shooting for a nice clean IPA that will also be my first all grain. I love hoppy beer and just recently did an extract with speciality grains IPA that is 7.3% and 73 IBU. I want this to less intense than that batch. Not that there's anything wrong with a sweet resiny IIPA

Tried the first bottle of my batch last night and it turned out great. It smelled like grass and hay and had a very slight hop taste to it with great apple notes.
I bottled last night and ended up with 30 bottles. I used carbonation tabs since my last cider batch is severely over carbed and I batch primed that one.
We'll see in three weeks how it turns out.
Today I threw in a half ounce of Cascade into my 3 gallon batch. I will let it go for a week, take a sample and see how it tastes. If it tastes how I want it it will be time to bottle. If not I have another half ounce I can throw in.
It's a 60 min boil. Add cluster at the beginning of the boil and start your timer at 60 mins. At EKG when the timer hits 20 mins and the irish moss when the timer hits 15.
I'm going to let it ferment dry. I'm not sure how long that's going to be but my carboy is bubbling like crazy so I don't think it should be more than a few weeks.

I agree. That's why I've had two so far. Completely forgot about doing a plastic soda bottle for a "carbonation meter" so I've had to sample. Or that's what I tell myself. :)
So I toiled for two days on what to do with this but I ended up bottling it last Monday (9/10). I had one last Friday (9/14) and one today (9/18). Both were under carbonated (as expected) but both tasted like wheat beer without any hint of sour or any other off flavor. I'm looking forward to...
