    finished a batch of 40% wheat summer drinker earlier today. in the buckets at 1.050. the T58 elixir should go down nicely on the hot days. This beer brightens up very well, most casual drinkers don't notice the amount of wheat in it. next up all vienna esb experiment.

    a vessel with co2 would be best for a secondary if you can not control headspace issues or using buckets. might be tough to bottle condition heavy beers sitting at 50 degrees as the yeast may go dormant and may not wake up to eat any priming sugar.     Not sure why I never truly dug into making a great burger. I suppose it was the cliche burgers and dogs and didn't warrant any attention. I have probably had more burgers last couple months than normally would in a year. Ciabatta buns my go to, holds up well.

    never had lag time as others with BRY97 (i do make starters). I prefer it over Nottingham. US-05 for me the yeast takes a longer time to drop out, i don't purchase it anymore. of course, I think 007 english yeast makes a unique pale ale.

    stop using a teflon skillet or whatever plasitisized material and use cast iron. i don't have a automatic dishwasher anymore but when i did pots and pans were always hand washed. now everything is hand washed, takes 10 minutes of my day.
