    This. Especially if your doing extract it would be easy to get 10 gallons done back to back or two batches at the same time if you have two pots. OR....just get a bigger pot and do 10 gallon batches. With extract brewing its much cheaper on equipment so I don't see this being out of the question....

    I am not sure if I understand your question exactly so im just taking a stab here. If your at 30psi and you want to get to 12psi, I would turn the nob down on your regulator to decrease the flow (the pressure wont change at this moment) Then, go and purge the keg a few seconds. At this point...

    Thats a lot of headspace, I am not sure but I think you can get away with it in Primary, but secondary would be a big no no.

    Sorry but this just isn't true. As the OP said some bottles just don't cap well. You don't really appreciate or spend time looking at the neck and caps of bottles like you do after trying to bottle and they just wont seal!!

    Again, just my opinion here I would just try and keep it in the temp range suggested for that yeast as much as possible. I wouldn't worry about changing it from cold, to room temp, to...whatever...Just keep it in that range for the whole time. The only brewing that really needs to change...

    If its your very first brew, I would personally highly recommend just following the directions carefully and get a feel of what brewing is about before thinking about making any changes to a recipe. Also, not to be rude but I doubt you know your boil off rate if you havn't used your equipment...

    My knowledge of brewing can't explain why it still works or how, but yes it does. I done two quick lagers with Wyeast 2308 smack packs and once with Saflager S-23 Dry Lager Yeast.

    You should really look into the fast lager method. I have done if 3-4 times now and if you follow the directions as brulosophy writes them it works. People who say it dosen't work ALLLLL altered his instructions in some way or fashion. I even asked a brewer at one of my local craft brewery...

    I have one of these as well, and was excited to use it. Needless to say I don't really use it anymore its a pain in the ass to keep up with and it does clog especially if your brewing IPA's. I went back to using just my ole immersion chiller a lot less of a hassle. So, I feel your pain man.
