    Gremlins have been drinking my brew

    Could the cooler temp have something to do with it? I know when I clean a 5G carboy with warm water, after stiting overnight and cooling down the water will drop ~4 inches.

    +1000 One scratch, chip, etc and it could just explode in your hands. Try the carb caps, they work great. Had a little left over Nutty Brown that would not fit in the keg...carbed it up and cooled it and had a sample before the keg was ready.

    You could also pitch a higher attenuating yeast to drop it a little more.

    1) add it now while still fermenting 2) With table sugar or honey you might need it. Add it if it is still in first half of ferment (SG+FG/2) and if you add honey, but be careful it will release a lot of CO2 and might overflow if you don't have any headspace.

    What is the purpose of the wax? I understand cork but I thought the caps were air tight already. RIP, that is a nice little trick for wax though.

    Thanks for the info...I will have to see if I can get a grain analysis. I am going to use wheat in a dunkles weissbier and read that a rest at ~120*F would help with the production of the banana and clove esters during ferment. The false bottom looks like it would leave more space to fill...

    No, I was going to try infusion but it seems like I would not be able to raise the temp to mash without using almost all of my sparge water even adding boiling water. Not sure if I want to do a decoction but did find this video and it looks doable in a cooler. He is heating the grains...

    You could also just throw in some rice hulls to prevent it. I use 1 lb in a 5G batch, around 12-13% but I'm sure you could use more.

    I use growlers (2L soda bottles work too) or 3G kegs (hard to find at a good price).
