I've never used honey in a beer, but some of my mead primary fermentations using non-filtered honey have lasted for two or three months. It's done when it's done. Did you take an OG reading?

I will try this. If it hasn't dried up after 3 weeks or so in primary, it's going straight to bottles that say "unicorn puke" and I'm giving it to my friends.

Ambient temp in the brew closet has been between 62-64F. By far the coldest part of the house. I haven't taken a wet reading, and I probably won't, but I'm willing to bet it isn't above 70.
