Err.. I am correct. Refracts are not accurate with alcohol present. Yes you can calculate the correction, but that doesn't make what the refract displays accurate. Semantics... damn. :)

Refracts are not accurate when alcohol is present. Use a hydrometer after fermentation begins. Glad to see someone represent flying fish. You from new jersey?

Or put a balloon over the neck of the bottle. If the balloon inflates then the cap is leaking.

Can't comment on the viability of the yeast but safale us-05 would be a good substitute.

What WLP yeast uses strictly saccharomyces.

Are saisons brewed with regular yeast, or do they have buggies in them too. Been searching the google and have not come up with a concise answer.

All the ranco does is turn the fridge on and off. It does not directly control the refrigerator.

I would isolate the equipment you used for this batch and designate them as for sours only. Anything soft such as plastic, bungs, racking cane, beer thief, etc.

You know when making a sour.... an infection is intentional, although if it's intentional it would no longer be an infection. :tank:

Had my freezer delivered yesterday and hooked up a ranco dual stage temp controller. I decided to use a Thermowell and my first use was crash cooling a Belgian wit. Set the controller to 34f with a 2* swing. I'm getting icing on the top layer of beer. I'm guessing because that is reaching...
