    Sits in the keg. I have a conical so it never sits on the yeast for extended periods of time. But overall I think not rushing any one step in the process leads to a better product.

    Yes, I agree. I’m not a fan of going grain to glass in a short amount of time. Every beer I’ve ever made only seems to get better as it sits (for a reasonable amount of time).

    Now I’m gonna have to get my hands on one of these - specifically brewed by them. I’m guessing it doesn’t actually taste like a typical OH IPA. I’d also be interested to see how it compares to other brewers who decide to use the recipe.

    After playing around with multiple combinations and sampling about a zillion IPAs I’m now under the impression that house flavor is not purely from yeast.

    In my experience Idaho 7 can be overwhelming. I’d go lighter on those, or better yet, move them earlier in the process and go heavier on the Citra & Simcoe in the DH. That’s just my preference.

    ‘I wonder’ is not something I would suggest using as a fact. I’ve yet to see any credible evidence that dry hopping early in fermentation is a good thing. I think Janish is great, I enjoyed his book, but sometimes I feel like it’s made alot of home brewers believe some of these nonsense brewing...

    That’s correct, centrifuge in both locations. And when asked they responded like it was a necessity - “of course we do”.

    The tank log posted on the OH clone thread also indicates they DH post fermentation. I believe the podcast he is referring to is from Feb. - so relatively recent.

    I was referring to the post on page 2 from @Brewpharm_hill - “I did a tour there and if I remember correctly they said they use Imperial's Joystick or something like that for their house strain”. Seems like quite a coincidence that a18 appears on the brew sheet - which is also a name for Joystick.

    I Is it confirmed they use LAIII or is that just the assumption from the one google search. I thought someone mentioned prior to the brew chart being shared that they use joystick? LAIII usually sticks out to me and I’ve never gotten it from any OH beers.

    I would agree with all of that with the exception of the comparison to TH. I love OH, and I agree that they’re beers have been excellent lately, but TH is still way ahead IMHO.

    Just tested OH Double Red Chroma. Came in right at 1.020
