New England IPA "Northeast" style IPA

I typically brew DIPAs and wouldn’t consider going less than this with 6G in the FV. That’s under 5lbs/barrel, correct? Are people still using much less in the DH than this?

Congress St was unbelievably good back in the day. I gave up on Trillium years ago. I thought they were the best for awhile. Other Half did Congress St for a freaky Friday and it was amazing. Sad that someone else makes your beer better than you do.

I believe this was said awhile ago, and in a time when he was vocal about brewing every batch himself.

New England IPA "Northeast" style IPA

Quality has definitely gone down. Once in awhile they’ll put out a beer that is astonishingly good, and it’s a reminder of what their beer tasted like years ago. IMO when they put out a good batch it’s better than anything else on the market. By far. Unfortunately most of the time it’s missing...

Good advice. I was thinking the same thing when I saw the question.

New England IPA "Northeast" style IPA

I feel like the hop game has actually gone backwards. The market seems to be flooded with mediocre beers. TH, Trillium, and OH have all fallen victim to the expansion vs quality demon. I find it extremely difficult to get my hands on great IPAs in the central NY area on a regular basis. I did...

You folks that are enjoying your Simcoe, where are you buying from?

New England IPA "Northeast" style IPA

Simcoe LUPOMAX + Mosaic LUPOMAX or Simcoe Pellet + Mosaic LUPOMAX? I haven’t been brewing as much as I’d like lately but am really curious about LUPO vs Pellet. Building my next beer off your comments from Omega: Cascade Mash LUPO Late boil Phantasm WP Bells T90 DH Pretty expensive beer. Lol...

New England IPA "Northeast" style IPA

It seems like either method would be equivalent in terms of flavor extraction or aroma. If my hops drop too quickly I hit it with co2 from the bottom. Any time I try methods like this oxygen scares the hell out of me, regardless of how much I purge everything. I haven’t really noticed a...

That’s really interesting. I missed that. I think I'm typically heavier on the hot side than most. I’ll try moving LUPO to the hot side and all T90 DH. I don’t think I get too much from WP - I’ve been lowering those amounts and pushing them to late boil. Where is everyone getting cone hops...

New England IPA "Northeast" style IPA

That was my first thought as well. In my experience, if I brew that exact recipe it will taste nothing like Jasper. @Dgallo I haven’t been following this thread as heavily lately but remember you like LUPOMAX. Curious if you still like it. I’ve been doing 2 to 1 pellet/LUPO DH but haven’t...

New England IPA "Northeast" style IPA

Dry hopping early in Fermentation and dry hopping at the tail end are very different things. It’s not fair to categorize all breweries who add hops before FG into one bucket. I highly doubt TH is dumping in their hops early in the process. Their beer is typically best a month or so in, depending...

Isolated Yeast (Tree House): How to Identify and Characterize?

Their beer has gotten so bad that it can be confused with Equilibrium?? 😜 In regards to yeast - I think it’s very unlikely T58 or WB06 are pitched early in the process. I’ve played with these quite a bit. You pitch to little, it contributes nothing to the flavor. You add too much, and it sticks...

    Not impressed with BRU-1

Same, not a fan at all. Probably good in small amounts, but can quickly overpower other hops. For me it’s like a super earthy, dank pineapple.

New England IPA "Northeast" style IPA

Interesting, thanks for sharing. I did a DH during fermentation experiment by mistake recently. First time recipe attempt. Apparently my heater malfunctioned, probably sometime around peak fermentation, and the temp dropped into the 50’s. I didn’t realize exactly what happened at first, so I...

Isolated Yeast (Tree House): How to Identify and Characterize?

I know a lot of people love them, I personally didn’t care for them. The last two times I’ve gotten TH the majority of the beers have been really bad. Some of my friends still seem to enjoy them, but I get an overly ‘green’ vegetable flavor from them that doesn’t go away. Maybe it’s something...

New England IPA "Northeast" style IPA

I don’t think there’s any benefit to dry hopping early in fermentation. And more haze certainly isn‘t equivalent to better beer. You can make a really hazy beer that looks cool but tastes like $h!t and you can make an amazing ipa with light haze. If you really want to DH during fermentation do...

Isolated Yeast (Tree House): How to Identify and Characterize?

From what I’ve seen the price of their beer is directly correlated to amount of hops. So take price of KJJJ, find the ‘Limit’ beer with the closest price, and there’s your answer.

The label on the spelt I have specifically stated higher protein and lower gluten than wheat.

New England IPA "Northeast" style IPA

Anyone knowledgeable on here in regards to protein vs gluten in this style? I made back to back DIPAs - first one was 2row/white wheat. Second one I replaced wheat with Spelt. So second beer should be more protein, less gluten. The mash for the spelt beer was like cement - I had to constantly...
