    I grew up in Austin. We never had a pool but the neighbors did. Do not miss the humidity!! Hang in there.

    I should have used a blow off tube ...

    Bummer. Fermcap S is your friend. It kills the krausen by breaking the surface tension so it makes it harder to monitor the fermentation but prevents these issues. Pros use it all the time in the kettle and again in the fermenter highly recommend.

    This is exactly the scenario where a Blichmann quick carb or home made equivalent would come in handy. I use it for all comp beers so I can carb the day after Kegging and let them settle in. Highly recommend. You can try a burst carb by shaking and rolling it around with the gas on. And...

    You could keg condition it w sugar and yeast. Would keep well that way. Let it sit at ambient two weeks to carb up sitting 6 weeks should be fine. First pull or two will clear the yeast.

    Same issue here. I mostly brew Saisons. Some get kegged to drink. Some go into my solera before bottling or keg conditioning which buys me time. Having two wine fridges for ‘cellaring’ is nice when they’re not completely full of wine. I brew more intermittently now - mostly around competitions...

    Smoked a bird night before last with pecan. Was raining so I used the electric smoker. Note how I’m preheating the wood like splits on top of the cook chamber of a TX offset smoker😂😂😂😂😂

    HB Saison (yet another one!) w Dupont and East Coast Yeast Saison Brassiere blend. “We dont need no stinking Tekus!” Pecan smoked spatchcock chicken under the patio (it’s raining!) .....monitored by the infamous Inkbird......notice I’m preheating the wood just like on a TX offset smoker 😂 😂...
