Sounds like an interesting experiment. I dig Saisons and the LA3 yeast (which i think helio is derived from).

Good news. I was there last time NHC was. Place was a little run down. Club night on the patio was a good scene but the beer in the bars on site all tasted like pouring through dirty tap lines. I orderrd exactly one and did not finish it. Im thinking of attending next year.
