Impossible to say. Will depend on grain bill, mash conditions (temp, liquor to grist ratio), O2, yeast count, temperature etc. in my experience (and under conditions i use for Saison) Id expect it to finish drier.

Yes. Will competition beers be due in late summer? Horrible time to be shipping entries. I’d prefer a single round competition. Doubt Id attend either but let’s see how it unfolds.

Breweries harvest yeast for reuse. They add nutrient in the kettle for each batch. They also pitch an appropriate amount of yeast. If i understand correctly your siphoning off beer and adding fresh wort on top of your yeast cake (and trub). Thats way over pitching plus your building up new trub...
