    Brewferm Christmas beer

    Today I sampled the batch made back in September. It's too much on spices for my taste. Maybe a few more days in the fridge will improve it, but it's hard to say.

    Apples naturally ferment from the yeast... Animals love fall and apple orchards, so it should be safe. Last week er so there was a bear in the news that was stumbling drunk after he ate a lot off apples that were left on the ground at a local orchard.

    I've switched to filtering my water with a Pur filter and it cleans up the chlorine nicely. It'll also help remove any bacteria that the water treatment plants may miss. The company got their start by making water filtering gear for the military.

    I was using the one liter size bottles. Still it seems I used way too much... smeg.

    I used a table spoon in each. I usually mix a 1/4 cup in the bottling bucket, but the spigot broke and I had to siphon from carboy to bottle directly.

    Had six liters of a Brewferm Christmas beer aging for about a week after bottling, woke up and bottom blew out of one of the EZ-Bottles. I think I'll stick the others in the fridge to kill off the carbonation in the rest. :(

    I've been drinking a year old munton's extract stout brew of late. Age seems to make it better. It's been kept in a cool place and in the dark for all it's life.

    You can check the recipe section and get a feel of those listed. The clones are probably clearly listed along with comments on those that are close to a specific type.

    Ok got most of the batch in a secondary. I'm doing the berries along the lines of a kriek beer, though I did add some corn sugar to help. The cranberries were frozen but thawed to room temperature and washed before being added.

    First Brew, no hydrometer

    I didn't find mine yesterday until the batch I was making was in the carboy and the yeast pitched. I have to hide mine or it'll get broke by the kid or misses.... Did too good a job of it eh?

    I ended up making six gallons of brew, but my secondary is five gallons. So I'll bottle about a gallon when the primary is done and put the rest in with whole berries and let them set awhile in the secondary. It'll make for an interesting comparison.

    I actually like the Pilsner Urquell better, but stores keep it sporadically at best in my area.

    I love this seasonal. If you like Redhook's Longhammer IPA... Give this one a try. I drool at the smell of the pour and getting to do the same at them mention of it's name.

    I just jugged a batch I re-fermented with a pound of dark brown sugar. It was a bit fizzy as it siphoned in the bottling bucket. I boxed it up and put it in closet storage. I set the last gallon of the November 2010 batch on the shelf for the upcoming holidays... :tank:

    Got an extract pale ale with cranberries and honey cooling before putting in the carboy.

    I wasn't using a set recipe so I was using an a malt extract close to in size with what I've used in a whole kit before, so I was experimenting somewhat. Perhaps I should've looked over the recipe section. I was using cascade hops in the batches. I am developing my palate a bit when it comes...
