That's right, after brewwing for a year I decided to brew every two weeks, and I promised myself not to drink a homebrew In two months, I got enough reserves to drink propertly aged beer for the rest of my life.

Lucky guy, I wish my house was 60 F. I would not worry about heating that room. My best beers were brewed in winter, when my house temp is 55º F. They just need some more time to ferment.

I use my homegrown hops for flavoring and aroma, since the AA can vary a lot from one harvest to another.

No need to sanitize it, even if it's not distilled. bottled water for the store is enough. I just use distilled water when the water from the tap you use for boiling your wort has a lot of minerals.
