Well I brewed an extract pale ale today. I planned fairly extensively and had a successful but definitely not flawless day. (why can't everything just go smoothly?) Problems were :

1) wort chiller leaked at the fitting. This really sucked. I had a pretty bad drip but just continued the chilling and will fix it later. It sucked to have water everywhere. I'm going to go with brass quick disconnects on prechiller and wort chiller from now on.

2) Messed up OG hydrometer reading so won't ever know that. (visualize Chris Farley saying "I'm an idiot.... back to the van down by the river...")

3) Feel free to laugh at this one... punched stopper into fermenter! Oh well it was sterile so it's just gonna stay in there till transfer to the secondary. Good thing I had an extra stopper. I did a little research and most say no biggie just get it out after secondary transfer.

Everything else went fine. I used a propane burner, prechiller in ice bath, regular wort chiller, forced oxygen, white labs cal ale liquid yeast. Will ferment in frig. with thermostat then keg into second frig.

Have you thought about shortening the hose between the preciller and chiller? I'm sure in Tx you've got some fairly high ambient temps, allowing the chilled water to heat back up by the time it hits the chiller. It could shave 5-10 min off chill time.
