    I just got a bench capper and tried to use it yesterday. The thing will not crimp the caps. I used as much pressure as I dared but using more might break the bottle.     I live in central calif.and it gets pretty hot here as well. I to carb/condition in a water bath to keep temp down and it works well. Keeping it between 68 and 72 deg works for me.

    Newbie question on brewing and temperature stability

    I use tsp, on tablespoon per gallon, and it works very well on labels. Leave them soaking for two days seems to work pretty well and it's not that expensive.

    Cooling without cooling equipment?

    you can just add ice cubes to the wort in the fermentor as well. 8 lbs equals about a gallon of h20. I do this when the wort has cooled to below 100 degrees.

    hi from Hanford, Ca. Down the rod from you. Bit. I'm a noob too, have my third batch fermenting, second carbonating and first one mostly consumed. It turned out surprisingly well, a pale ale.

    FG quite high

    I had the same thing happen with the batch that's carbonating now. OG was 1.044, FG 1.018. It read the same for five days so I just bottle. It'll be interesting to see how it comes out. It is a Midwest kit, Blackdog Ale.

    Bottling

    I use tsp and chlorine (1tbs per gallon of water) and let it soak for a couple of days and the labels slide right of as well as most of the glue. Of course I,m a real newbie so I,m sure there are better ways. This also cleans out gunk from old bottles nicely.
